pumpkin mac & cheese (vegan + gf)
Hi!!! Welcome to my recipes. This is long overdue, but I’m so excited to get started sharing some of my favorite recipes with you. I love cooking, and always have- it’s so fun, relaxing and meditative for me. Basically everything I cook is made with whole foods, is pretty simple, and is delicious (duh). Of course there will be some exceptions- I mean, everyone needs real chocolate chip cookies now and then, and sometimes you just gotta whip up a crowd pleaser when you’re having people over, you know what I mean? But for today, enjoy this yummy vegan pumpkin mac & cheese that is a perfect, healthy, comfort food for any crisp fall night. Enjoy, and let me know if you make it!

Pumpkin Mac & Cheese

- 4c (dried) pasta (I love Jovial brand)
- 2 clove of garlic
- 1 tbsp olive oil
- 1 tbsp vegan butter (I love Miyokos)
- 1/4c chopped onion
- 1c pumpkin puree
- 2c oat milk
- 2 tbsp gluten-free flour
- 1/4 c nutritional yeast
- .5 tsp dijon mustard
- 1/4c grated vegan cheese (Violife Parmesean)
- 1/4 tsp paprika
- 1/4 tsp garlic powder
- a little less than 1/4 tsp salt
- fresh sage (optional)
- a few shakes of pepper + red pepper flakes
- avocado oil spray (or oil spray of choice)

- salt a large pot of water and bring it to a boil. cook pasta until al dente.
- reserve a small amount of pasta water for later. rinse pasta in cold water after it's done cooking and set aside.
- preheat the oven to 400
- *I work on the sauce while the water is boiling and the pasta is cooking, usually the sauce and pasta finish cooking at the same time* heat a small saucepan over medium heat and coat the bottom with olive oil
- add chopped onion and garlic to warm oil. lower the heat to medium-low.
- add pumpkin & oat milk and stir.
- add nutritional yeast and flour and stir.
- lower heat to low, add 2 tbsp of cheese, all remaining spices and stir.
- turn the heat off, keep stirring until ready to use the sauce to prevent it from burning.
- place pasta back into the pot, heat to low, add butter and stir.
- add pumpkin mixture and stir. add 1-2 tbsp reserved pasta water to thin the sauce if needed. add remaining 2 tbsp of cheese and stir.
- spray baking dish with oil spray of choice (avocado oil)
- pour pasta with pumpkin mixture into the baking dish, sprinkle a little extra grated cheese and a few shakes of paprika on top, and bake for 15-20 mins.
